Ingredients:

  • 2 Carrots peeled and chopped 
  • ½ Cup of almond butter 
  • ½ Cup pure maple syrup 
  • 2 Cups coconut 
  • 2 Cups Old Fashioned Oats  
  • ½ teaspoon salt 
  • ½ teaspoon vanilla 
  • 1 teaspoon cinnamon 
  • Coconut sugar for rolling balls in and mix with cinnamon

Directions:

  • Add carrot chunks to food processor and pulse until finely chopped 
  • Put carrots in bowl to the side 
  • Put Oats and coconut in processor and blend until coarsely ground 
  • Put the carrots and the rest of the ingredients in and pulse until you have a smooth sticky dough 
  • Roll into balls and lightly coat with coconut sugar and cinnamon 
  • Refrigerate for at least 1 hour 

TIPS *: If you don’t have a food processor:  

  • Shred and chop carrots until fine  
  • Blend oats and coconut in a magic bullet or blender (should be course texture so don’t over bland) 
  • Mix together in a bowl 
  •  (don’t over mix but ensure all dry ingredients are mixed) 
  • Almond butter works best but you can use natural peanut butter or  
  • Wow butter for nut allergies
