Ingredients: 2 Carrots peeled and chopped ½ Cup of almond butter ½ Cup pure maple syrup 2 Cups coconut 2 Cups Old Fashioned Oats ½ teaspoon salt ½ teaspoon vanilla 1 teaspoon cinnamon Coconut sugar for rolling balls in and mix with cinnamon Directions: Add carrot chunks to food processor and pulse until finely chopped Put carrots in bowl to the side Put Oats and coconut in processor and blend until coarsely ground Put the carrots and the rest of the ingredients in and pulse until you have a smooth sticky dough Roll into balls and lightly coat with coconut sugar and cinnamon Refrigerate for at least 1 hour TIPS *: If you don’t have a food processor: Shred and chop carrots until fine Blend oats and coconut in a magic bullet or blender (should be course texture so don’t over bland) Mix together in a bowl (don’t over mix but ensure all dry ingredients are mixed) Almond butter works best but you can use natural peanut butter or Wow butter for nut allergies Recipe credit @plantsforfit
